Recipe: Macroona Imbakbaka

Eating well needn’t cost a fortune. We’ve brought together some low cost, high taste recipes which we’ll be sharing with you over the next few days.

To start with here’s one of our favourite north African dishes Macroona Imbakbaka. This is a brilliant dish to prepare for when you’re having a lot of people over or for a large family meal. It’s warming, delicious and easy on the wallet. It blends African spices with an Italian influence – the best of both worlds!

  • 1 onion, diced
  • 2 garlic gloves
  • 6 chicken thighs (with bone for flavour) olive oil
  • 2/3 cup tomato paste
  • Tablespoon salt
  • A pinch of turmeric, cumin and cinnamon 1 teaspoon cayenne pepper
  • 11 cups of water (to be added throughout) 1lb pasta of your choice

Add the oil and onions to a medium heat in a medium sized pot for around 7 minutes, add chicken and brown.
Lowering the temperature, add tomato paste, garlic, spice mix, salt and pepper and mix together, continue to cook for 3-4 mins.
Turning the heat back up to medium-high, add 7 cups of water to the mixture.
Bring the sauce to the boil and then lower back to medium-low and cover with a lid. Allow to cook for 25 mins, stirring occasionally.
Once the meat has cooked add the pasta.
Add the additional water to the sauce and allow it to boil.
Add pasta and stir every 2-3 min to avoid pasta sticking to the bottom.
Once pasta has completely cooked serve with a squeeze of lemon.
