Kofte go perfectly with tabbouleh and are surprisingly easy to make!
- Lamb mince (around 500g)
- One teaspoon of cumin
- One handful of chopped parsley
- One handful of chopped mint
- Two garlic cloves crushed
- Salt and pepper to season
Mix all the ingredients together in a bowl and then roll into long oval balls. Thread onto wooden or metal skewers and brush with oil. Cook on a hot griddle pan for 3-4 mins each side.
Serve with tabbouleh, flat bread and yoghurt with mint stirred through it.
